Work can be done every 1 minute. You can only do work for families that have at least one sponsor online and are currently accepting new members. The jobs themselves are written by users, and you must complete 3 for a specific family before any of it's sponsors are notified that you are working for them.
You can turn off the jobs board and this will allow you to do petty crimes. However if you turn off the jobs board you will not be able to turn it back on, so this is not advised unless you are a more experienced player.
